Chipotle Chicken Burgers With Avocado Sauce

This chicken burger is actually a twist on a Rachael Ray Chipotle Chicken Roll. I wanted to make it into a burger and use my own avocado sauce. I love chipotle peppers and the combination of the chipotle and the avocado is amazing!

Burgers
1 Pound Ground Chicken
1 Chipotle Pepper in Adobo Sauce
1 C Shredded Cheddar Cheese
1/2 t Minced Garlic
4 Hamburger Buns
Salt and Pepper to taste

Avocado Sauce
2 Avocados peeled and pits removed
1/2 T Garlic Powder
1 15 Ounce Can Rotel
8 Ounce Sour Cream
1. Chop chipotle peppers...carefully.
2. Add cheese, peppers and garlic to the ground beef. Salt and pepper as desired.
3. Score and roll into 4 patties and fry in a skillet with 1 T olive oil. Cook about 5 minutes on both sides.
4. Place all avocado sauce ingredients into a food processor. Process until creamy. Serve over chicken burgers. Enjoy!

Chicken Fajita Burgers

This is my best recipe by far!! The key is the fajita seasoning. You can use any brand, but this one is our family's favorite.


Ingredients:
1 Pound Ground Chicken
1 1/2 T Fajita Seasoning and 1 t Fajita Seasoning divided... and a few shakes here and there
1 C Shredded Monterey Jack Cheese
1 Chopped Green Bell Pepper
butter of course!
2T Chopped Fresh Cilantro
1/2 C Sour Cream
1 t Fresh Lime Juice
1 Package of Bun
1 T Butter
Serve with buns, lettuce and chips

1. Chop the bell pepper.

2. Saute in 1 T butter and 1 1/2 T fajita Seasoning. You can never have too much seasoning or butter!

3. While the bell pepper is cooking in the butter making you extremely hungry, you can dice up some of the fresh cilantro. This will be used for the sour cream and cilantro sauce.

4. Mix together cilantro, sour cream, lime juice and 1 t of fajita seasoning. This is so good you could eat it with a chips before the chicken burgers are even finished. You could make more and no one would ever ever know...

5. Amazing and smells oh so good. This is what it will look like when it is ready.

6. Pour this buttery pepper mix on top of your ground chicken in a large mixing bowl.

7. Add the monetery jack cheese. Add a little more cheese. No one is looking.

8. Mix and squeeze and combine with your hands. Next, score the meat into fourths. This is just a fancy way of saying to divide it into four sections. This helps to make your burgers the same size.
9. Roll them up. Rachael Rae says to make a little indention into the middle of hamburgers to keep them from getting the ugly bulge in the middle. I will pass along my new found trick. I like to fry them in the same pan that I cooked the peppers in. Hey, why not. I hate having to clean extra pans. Plus, it has all that flavor in it.

10. Cook about 5 minutes on one side and flip. It always cooks faster on the other side.
11. Stare and admire.

12. Place onto a bun and serve with the sour cream cilantro sauce, shredded lettuce and chips.
13. Enjoy!

Chicken Pot Pie Rolls


This is a fast and easy version of chicken pot pie. For the rolls you will need: 1 LB ground chicken, 1 Can Mixed Veggies drained, 1 Package of Pie Crust(should contain 2), 2 T butter, 1/4 t celery seed, 1/4 t Garlic Powder, 1/2 t Black Pepper, Dash of Salt.

For the Gravy Dip you will need: 1 Can Cream of Chicken Soup, 1 T butter, 1/8 C Chicken Stock or Broth, 1/8 t Black Pepper, 1/8 t Garlic Powder, Dash of Salt and Celery Seed to taste.

*Take out the pie crust ahead of time to soften.

Pot Pie Rolls:

1. Mix the ground chicken and spices.

2. Add the can of drained veggies.



3. Take out pie crust on unroll onto wax paper. Brush melted butter over the pie crust.

4. Put chicken mixture into a large plastic baggie.
5. Cut off the tip of the plastic baggie.
6. Squeeze half of chicken mixture down the center of the pie crust.

7. Roll up the pie crust and fold ends in to seal.
8. Brush melted butter onto the roll on both sides.
9. Repeat process with remaining pie crust and chicken mixture.

10. Place rolls on a foil lined baking sheet and put into the over uncovered at 400 for 20 minutes.
Gravy Dip:
1. In a sauce pan mix cream of chicken, broth, butter and spices.
2. Cook to a boil.
3. Simmer until rolls are ready.
4. Serve warm with the chicken pot pie rolls.
