Kind of strange, I know! Since buying a turkey and making a Thanksgiving dinner would be costly and probably seem a little strange to my family, I decided to come up with a meatloaf recipe that would taste like Thanksgiving! This could be served with cranberries and mashed sweet potatoes.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Ingredients&lt;br /&gt;Serves 4&lt;br /&gt;&lt;strong&gt;1 Pound Ground Turkey&lt;/strong&gt;&lt;br /&gt;&lt;strong&gt;1 C of Cornbread Mix&lt;/strong&gt; (I use Jiffy)&lt;br /&gt;&lt;strong&gt;3 Slices White Bread cut into squares&lt;/strong&gt;&lt;br /&gt;&lt;strong&gt;3 T butter&lt;/strong&gt;&lt;br /&gt;&lt;strong&gt;1/4 C Green Apple Chopped&lt;/strong&gt;&lt;br /&gt;&lt;strong&gt;1/2 T Onion Powder&lt;/strong&gt; (if you like onions, diced onions should be substituted here)&lt;br /&gt;&lt;strong&gt;2 t Parsley&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;&lt;a href="http://2.bp.blogspot.com/_2ztt2gwl6Ok/TEc_qBPQK5I/AAAAAAAAAbQ/03b5z1azO3Y/s1600/IMG_2721.JPG"&gt;&lt;img style="TEXT-ALIGN: center; MARGIN: 0px auto 10px; WIDTH: 400px; DISPLAY: block; HEIGHT: 267px; CURSOR: hand" id="BLOGGER_PHOTO_ID_5496431861348445074" border="0" alt="" src="http://2.bp.blogspot.com/_2ztt2gwl6Ok/TEc_qBPQK5I/AAAAAAAAAbQ/03b5z1azO3Y/s400/IMG_2721.JPG" /&gt;&lt;/a&gt; 1. In a large pan melt 3 T of butter and put in the bread, apple, onion power and parsley. If you like onion and celery, I think these would be great ingredients to add and should be put into the pan at this time. Allow this to saute over medium low heat until bread becomes slightly brown and apples are tender. Combine by hand and place into a greased loaf pan. I sprinkled extra onion powder and parsley on top. This recipe is based off of a childhood memory of a local restaurant that has long since gone out of business. I know I could never create anything as good as the baked spaghetti in my memory, but this comes very close. Too me, if it falls apart or can't be cut into a solid square, then it isn't baked spaghetti!&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Ingredients for 4:&lt;/strong&gt; Preheat Oven to 400&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;8 oz of spaghetti(a small fist full)&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;2 Eggs&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;1/2 T Oregano&lt;/strong&gt; &lt;strong&gt;&lt;br /&gt;&lt;/strong&gt;&lt;br /&gt;&lt;strong&gt;1/2 C Grated Parmesan Cheese&lt;/strong&gt;&lt;br /&gt;&lt;strong&gt;&lt;/strong&gt;&lt;br /&gt;&lt;strong&gt;1/8 C Grated Romano Cheese&lt;/strong&gt;&lt;br /&gt;&lt;strong&gt;&lt;/strong&gt;&lt;br /&gt;&lt;strong&gt;1/2 T Garlic Powder&lt;/strong&gt;&lt;br /&gt;&lt;strong&gt;&lt;/strong&gt;&lt;br /&gt;&lt;strong&gt;1/2 T Basil&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;1/4 C Mozzarella Cheese&lt;/strong&gt;&lt;br /&gt;&lt;p&gt;&lt;/p&gt;&lt;br /&gt;&lt;br /&gt;Sauce:&lt;br /&gt;&lt;strong&gt;1 (28) Ounce Can Diced Tomatoes in Sauce&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;1/4 C Mozzarella Cheese&lt;/strong&gt;&lt;br /&gt;&lt;strong&gt;&lt;/strong&gt;&lt;br /&gt;&lt;strong&gt;1/4 t Oregano&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;1/2 t Garlic Powder&lt;br /&gt;&lt;strong&gt;&lt;/strong&gt;&lt;br /&gt;&lt;strong&gt;1/8 Cup Romano Cheese&lt;/strong&gt;&lt;br /&gt;&lt;p&gt;1. When a recipe tells me how many ounces of spaghetti I need, it just confuses me! This recipe needs about a small fist full of dry spaghetti noodles. Cook spaghetti according to package directions. The original sandwich has eggplant, portabella, sun dried tomato and mozzarella. I wanted to change it up a bit and add a creamier cheese with more flavor. I also wanted to have the mushrooms be the main ingredient and skipped the eggplant all together. I think they turned out great. They could also be served on smaller pitas or paninis as an appetizer.&lt;br /&gt;&lt;strong&gt;Ingredients:&lt;/strong&gt;&lt;br /&gt;&lt;strong&gt;2 Large Portabella Mushrooms&lt;/strong&gt;&lt;br /&gt;&lt;strong&gt;3 T Olive Oil&lt;/strong&gt;&lt;br /&gt;&lt;strong&gt;1 t, 1/2 T Basil Divided&lt;/strong&gt;&lt;br /&gt;&lt;strong&gt;1 T, 5 Pieces Sun Dried Tomatoes Divided&lt;/strong&gt;&lt;br /&gt;&lt;strong&gt;1 Brick of Cream Cheese&lt;/strong&gt;&lt;br /&gt;&lt;strong&gt;4 Pita Shells&lt;/strong&gt;&lt;br /&gt;&lt;p&gt;* I warm the pitas in the oven at 350 and butter the insides of each one. Wipe off each mushroom cap with a moist paper towel. Put caps into a large bowl and pour in olive oil and 1 t basil. Allow to sit for 10 minutes.&lt;/p&gt;&lt;p&gt;3. In a sauce pan over low heat, add 1 T chopped sun dried tomatoes and 1/2 T basil leaves along with one brick of cream cheese. Combine until warmed and creamy. Fry the bacon. Brown the meat, drain fat and add liquid smoke and 3/4 C bbq sauce.&lt;br /&gt;**These are the brands that I use.  If you have never tried Head Country BBQ sauce you MUST.  I was shopping for BBQ sauce at the grocery store one day and a man handed me Head Country.  He said that it didn't have a fancy label and that it didn't have  fancy name, but that I would love it.  Gotta love friendly Texans! Have you ever tried to make something with a mushy brown avocado? Well I have done both. Living in Texas, we eat lots and lots of avocados, so I have gotten pretty good and picking them out. &lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;&lt;strong&gt;&lt;br /&gt;&lt;br /&gt;So what does a perfect avocado feel like? It feels like an orange in it's peel.&lt;/strong&gt; It is not rock hard and it is not mushy. It has a little give to it. If you find one that seems squishy inside, I promise you it will be brown on the inside. &lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;br /&gt;I was once at the grocery story squeezing avocados and a man started squeezing some too. After a few minutes he asked, "What are we feeling for?" Poor guy, he had no idea what a good avocado should feel like. So remember it should be as firm as the outside of a juicy orange.&lt;br /&gt;&lt;br /&gt;*If you are making a dip with it, go with a squishy one if the choice is between rock-hard and squishy.  Trust me! I was surprised at how moist they were. I think the key here is to get them good and browned and not be afraid that they are going to be overdone. My husband likes to put olive oil or butter into the pan. I don't think it is necessary so I don't. No one can make me either. But... if they start to burn you might want to add a little olive oil. I have the link posted under my favorite cooks link on the side bar. I got her new cookbook for Christmas and I LOVE it! I was surprised to learn that most of my family had never heard of her. That is crazy! Her blog has much more than recipes, but of course the recipes are my favorite part. Check it out...you won't regret it. She is a rancher's wife and her recipes are very easy and use ingredients that you probably have in your house. My favorite recipe from her blog is her beef tenderloin. Rachael Rae says to make a little indention into the middle of hamburgers to keep them from getting the ugly bulge in the middle. I will pass along my new found trick. I have just been meaning to post this amazing vodka sauce for a while. One more side note...you do not have to use such expensive vodka. Serve over the rigatoni noodles. I love this dish. It is very filling. If you find it too filling, cut out a 1/2 cup of the parmesan cheese. The red pepper flakes were a recent addition. My husband loves spicy food and I knew he would love this. If you prefer things less spicy, leave the pepper flakes out all together. The sauce is great both ways. I think this is pretty spicy, but my husband thinks it could use two jalapenos instead of one. It is in the jelly aisle and I have tried several brands...never had a bad one. If you can't find it, you can substitute mint jelly(but I would try harder to find it.)&lt;/p&gt;&lt;p&gt;1. Chop the veggies and be careful with the jalapeno! Put butter in a large pan and melt until it starts to brown a tiny bit. &lt;/p&gt;&lt;p&gt;2. Add the veggies to the pan and saute with spices. Let it saute for a few minutes until the veggies become tender. &lt;/p&gt;&lt;p&gt;3. Next add 1/4 C chili sauce.&lt;/p&gt;&lt;p&gt;4. Remove from heat and let it cool for a few minutes. Then add milk and stir.&lt;/p&gt;&lt;p&gt;5.
